We sat down with the owner Domingo recently for an article in our Newsletter.
The restaurant business has been in Domingoβs blood most of his adult life. He first came to the US in 1984 to work for his uncle, who had 8 restaurants. The restaurant business has always been a family endeavor. After 15 years with his uncle and learning the business, Domingo, his wife Maria, and his brother decided to venture out on their own and start a restaurant in the Green Lake neighborhood of Seattle. Seeing success with that location, Domingo and Maria were eager to start another location and 11 years ago Las Espuelas opened their doors. Theyβve turned into a neighborhood staple for people in Mountlake Terrace and Brier.
Talking with Domingo, it was easy to see the love that he has for the community that has been so good to him and Maria for the past 11 years. He speaks with pride and love as he tells us about his clientele and how he has watched little kids grow up and who are now teenagers. To him, they are not customers, but family. As we talked about how this last year has been, it was obvious that, like most small businesses, itβs been a very difficult year. He is still in awe of the support they have received. Each time, they needed the community to step up, they did. He recalls one post that someone had put on the Mountlake Terrace Facebook page that Las Espuelas needed business. The next day it was like Cinco de Mayo! They ended up having to close at 6pm because they didnβt have enough food for everyone who showed up. He gets emotional thinking of how often the community has stepped up for them. They feel very blessed and fortunate to have developed such deep roots.
We turned our conversation to their menu. We tried to get Domingo to tell us which item was his favorite. He laughed, he loves everything on their menu and would not commit to a favorite. We asked about the mole sauce, which was different than any Sandra had had before. We found out that one of his chefβs has a Caribbean food background and the mole was reflective of that. The menu is diverse and you will find dishes from Colombia and Peru. We are looking forward to sampling our way around Latin America via the Las Espuelas menu.

Hey, we are at Las Espuelas Mexican Restaurant in Mountlake Terrace. This is one of my favorite Mexican restaurants of all time in the area.
I can’t say the name, but it means The Spurs, that I can say, I can, that I can manage. And I am having my traditional dish, which is Chicken Mole and their’s is a little sweet. I haven’t had it sweet before, so I’m looking forward to this.
And I am having Arroz Carnitas. So it’s chicken.
And it looks good.
It does.
So anyhow, you should come check out this joint, super sweet staff. Oh my goodness, the owners are just lovely, lovely people. And they’ve been around for what, quite a while now?
